if the employee agrees it is legal. yung requirement is to give rest day. you can work on your rest day. you just get extra pay when you work on rest day

i believe that like the minimum wage, the employee does not possess the right to waive that. but since i dont have any experience in this particular case perhaps you shoild ask dole
