Good day! I am just new in Human Resources. At least half of our company's employees don't have employment contracts. How should I date their contracts if I were to provide them?

Should I indicate the actual date they started on the "date signed" section (which definitely feels wrong) or should I just state in the contract that the effects of such agreement is retroactively effective on the actual date the employee started?

Thank you.

I believe that it is ok to date the document to the actual date of the formulation of the contract and indicate therein the true date of the employees' hiring AND include therein the 'retroactive provision.

Yes, HRDude's advice is spot-on. As long as all the facts indicated in the employment contract are true and undisputed by the employee, there should be no problem in indicating that the contract was formulated on the actual date with the retroactive proviso you plan to include.
