Arresto Menor

We had a labour case against us, we attended an initial meeting then never heard anything, until we were issued with a decision made letter.
We said we never received any further communication from D.O.L. but turns out they have a signed receipt on June 21st 2016, it was an employee received the letter, but now says she can't remember what she did with it, so it was never received by anyone in management, the D.O.L did not try to contact us before making a decision, so we have never had a chance to defend ourselves.
Now we have to engage a lawyer for 28th September, can anyone please offer any advice, or is there anyone that makes a living from representing employers at the D.O.L.

Thanks for any advice.
